Egg Flip
Egg Flip Back in the eighteenth century, flips made by heating a mixture of beer, spirits, and sugar with a hot iron were extremely popular, particularly with sailors. By the late Victorian and Edwardian period, it was virtually identical to egg-nog, in which eggs were beaten into hot beer, cider, wine or spirits, but made with hot milk. The following comes from Georgina, Countess of Dudley, a friend of Edward VII.
1 egg
1 teaspoon sugar
1 cup Straus Whole Milk (of course, they could only dream of Straus milk back then...)
1 teaspoon brandy
Lightly beat the egg, just to break it, and pour it through a sieve into a large mug, then beat it with the sugar to form a froth. Heat the milk until it is hot, but not boiling, and pour it, while beating, into the egg mixture. Finally stir in the brandy and serve.
