CHAI

Weight Volume Ingredient
75 g 2/3 cup Chai Masala
175 g 3/4 cup Boiling Water
100 g 1/3 cup Honey
1 gallon Straus Organic Plain
Soft Serve Mix

In a large container (1.5 gal+), blend chai masala and boiling water. Add to a blender, along with the honey and the 2 to 3 cups of Straus Organic Plain Soft Serve Mix. Blend on high for one minute and pour back into a large container with remaining Mix. Stir to blend thoroughly.

This recipe works with any finely ground spice blend.

 


CAJETA

 

Weight Volume Ingredient
1.5 kg 3 cups Cajeta
1 gallon Straus Organic Plain
Soft Serve Mix

Add cajeta and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining mix. Stir to blend thoroughly.

Any caramel can be substituted for the cajeta in this recipe.

 


MILK & HONEY

Weight Volume Ingredient
1 kg 3 cups Wildflower Honey
1 gallon Straus Organic Plain
Soft Serve Mix

Add wildflower honey and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining mix. Stir to blend thoroughly.

 


BANANA

Weight Volume Ingredient
1 kg 4 cups Banana Purée
(Boiron preferred)
1 gallon Straus Organic Plain
Soft Serve Mix

Add banana purée and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining Mix. Stir to blend thoroughly.

This recipe works with any frozen fruit purée.

 


PEANUT BUTTER

Weight Volume Ingredient
1 kg 4 cups Smooth Peanut Butter
100 g 1/3 cup Honey
1 gallon Straus Organic Plain
Soft Serve Mix

Add smooth peanut butter, honey and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining mix. Stir to blend thoroughly.

This recipe works with any smooth nut purée.

 


GOAT CHEESE

Weight Volume Ingredient
1 kg 2 1/4 pounds Fresh Goat Cheese
1 gallon Straus Organic Plain
Soft Serve Mix

Add fresh goat cheese and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining mix. Stir to blend thoroughly.

This recipe works for any fresh cheese or cultured milk product like yogurt or cream cheese.

BLACKBERRY-VIOLET

Weight Volume Ingredient
850 g 3 1/2 cups Blackberry Purée
(Perfect Purée preferred)
10 drops Violet Essential Oil
(alpha ionone)
1 gallon Straus Organic Plain
Soft Serve Mix

Add blackberry purée, violet essential oil and 2 to 3 cups of Straus Organic Plain Soft Serve Mix to a blender. Blend on high for one minute and pour back into a large container with remaining mix. Stir to blend thoroughly.

 


BLACK OLIVE-CARAMEL

Weight Volume Ingredient
500 g 2 1/2 cups Sugar
750 g 3 1/4 cups Water
100 g 2/3 cup Oil-Cured Black Olives
Coarsely Chopped
1 gallon Straus Organic Plain
Soft Serve Mix

Cook the sugar until deeply caramelized, add the olives. Stir to combine and then add the water. Boil five minutes, then cool. Blend on high with the base for one minute.

Essential Oil Recipes

For all essential oil recipes, whisk the oils into the base, and add a little at a time, tasting as you go — like the ingredients from which they were extracted, oils can vary in intensity quite a bit. All ratios are for one gallon.

 


PEAR-CINNAMON

75 drops Pear Essential Oil
15 drops Cinnamon Essential Oil
1 gallon Straus Organic Plain
Soft Serve Mix

Gradually add oil drops into the base and whisk to incorporate. Taste as you go, as oil intensities can vary.

 


BITTER ORANGE-TARRAGON

30 drops Bitter Orange
Essential Oil
5 drops Tarragon Essential Oil
1 gallon Straus Organic Plain
Soft Serve Mix
