Peaches & Cream French Toast

This Peaches & Cream French Toast uses melted Straus Family Creamery Organic Vanilla Bean Ice Cream as a clever two-ingredient hack for rich, perfectly golden French toast. Topped with warm caramelized peaches, a buttery homemade crumble, and an extra scoop of ice cream, it is an indulgent twist on a classic breakfast favorite.

Ingredients

French Toast

Caramelized Peaches

Crumble

  • 1/2 cup all-purpose flour
  • 1/4 cup European Style Unsalted Butter, softened
  • 1/4 cup brown sugar
  • 2 tbsp more all-purpose flour
  • Pinch of sea salt
  • 1/4 tsp cinnamon (optional)

To Serve

  • Additional Straus ice cream scoop
  • Optional: honey or light syrup for drizzling

Instructions

Make the Crumble (can prep ahead)

Step 1

Preheat oven to 350°F.

Step 2

In a bowl, combine flour, softened butter, brown sugar, additional flour, salt, and cinnamon if using.

Step 3

Spread mixture on a baking sheet and bake for 8-10 minutes until golden and crispy.

Step 4

Remove from oven and let cool. Break into chunky pieces. Set aside.

Caramelize Peaches

Step 1

Melt 2 tbsp butter in a skillet over medium heat.

Step 2

Add sliced peaches, brown sugar, cinnamon, and sea salt.

Step 3

Cook for 3-4 minutes, stirring occasionally, until peaches are golden and caramelized.

Step 4

Remove from heat and set aside.

Make the French Toast

Step 1

Let the ice cream sit at room temperature for 1-2 minutes to soften slightly, or microwave for 10-15 seconds until softened.

Step 2

Pour melted ice cream into a shallow bowl or dish.

Step 3

Heat neutral oil or butter in a large skillet over medium-high heat.

Step 4

Working one slice at a time, dip bread into the melted ice cream, coating both sides well.

Step 5

Place coated bread into the hot skillet.

Step 6

Cook for 2-3 minutes per side until golden and crispy on the outside. Transfer to a serving plate.

Assemble & Serve

Step 1

Place warm French toast on a plate and top generously with caramelized peaches.

Step 2

Sprinkle homemade crumble over the peaches.

Step 3

Add a fresh scoop of Straus ice cream on top.

Optional: Drizzle lightly with honey or simple syrup.

Serve immediately while warm.
