Blueberry Pie-Inspired Overnight Oats

Ingredients

Crumbly "Pie Crust" Topping
  •  old-fashioned rolled oats
  •  all-purpose flour (or rice flour)
  •  sugar
  •  salt
  •  vanilla bean paste (or extract)
  •  coconut oil
  •  ground cinnamon

Instructions

  • Overnight Oats: In each jar, layer oats and chia seeds. Splash in our Organic Cream-Top Whole Milk. Top it off with Organic Whole Plain Greek Yogurt.  Seal the jars tightly and give them a good shake until all ingredients are well combined. Let them chill in the fridge overnight or for up to 4 days.

  • Crumbly "Pie Crust" Topping: Preheat your oven to 350°F. With your fingers, mix oats, flour, sugar, salt, vanilla bean paste, coconut oil, and cinnamon. Spread the crumbles on a baking sheet and bake for 5 minutes. Stir, then bake 4 more minutes until golden. Let it cool before storing.

  • To Serve: Give your oats a stir, add some blueberry jam or fresh berries. Sprinkle on that irresistible "pie crust" topping and dive into a delightful blend of creamy-meets-crispy goodness!
