Ingredients

2 pounds cherry tomatoes
1 yellow onion
1 head of garlic
1/4 cup Straus Organic Heavy Whipping Cream
1 tablespoon salt
3 tablespoons olive oil

Instructions

Step 1

Combine tomatoes (halved), onions (roughly chopped), and garlic (topped or peeled) with salt and olive oil. Bake at 400 F for 30 minutes. Transfer the roasted tomatoes, onions, and garlic to a pot and blend with an immersion blender or use a mixer.
Step 2

Mix in Straus Family Creamery Organic Heavy Whipping Cream for a rich and velvety finish. For an especially smooth texture, strain the soup after blending. Serve with a drizzle of Organic Heavy Whipping Cream and hunk of crusty bread. Optional: Garnish with basil and olive oil.
