The primary difference between Straus and many of the other organic dairies is that we are also the farmers. We began as farmers over 65 years ago, and are still farmers to this day.
We’re also unique in that we run a creamery AND a dairy. We make our Straus Family Creamery products from our own family farm as well as from three other nearby family-run organic dairies.
In addition to organic farming we’re always reevaluating and improving our environmental practices. While our cow waste is being fully used as fertilizer on our fields, our latest improvements include producing electricity from this waste by using a methane digester. This is already producing enough electricity for most of the dairy’s energy needs.
Our next big project is converting our dairy and creamery equipment to run on biodiesel. Right now we have a new boiler at the creamery running on coconut oil! It smells like a luau out here.
