Patbingsoo

Patbingsoo, the beloved Korean red bean shaved ice dessert, gets an upgrade! Stella Navarro-Kim (@stellanspice1) uses shaved milk ice, which offers a creamier texture, to take this dessert to the next level. Stella created this refreshing treat using our Organic Cream-Top Whole Milk to make the milk ice cubes and sweetened condensed milk used as a topping.

Ingredients

  •  Straus Organic Cream-Top Milk
  •  sweetened condensed milk (made from Straus Organic Milk)
  •  strawberries
  •  blueberries
  •  bananas
  •  kiwi
  •  sweetened red bean paste
  •  mochi

Instructions

  • Pour 2 cups of Straus Organic Cream-Top Milk into ice trays and freeze overnight. Put the bowl you will use for the Patbingsoo into the freezer as well.

     

  • The next day, chop your choice of fruits into bite-sized pieces. I recommend strawberries, blueberries, kiwis, and bananas.

  • Using an ice shaver or food processor, shave the milk ice cubes into desired consistency. Finer ice will be softer, while coarsely shaved ice will be a bit crunchier (the way I like it). If using an ice shaver, shave directly into the cold bowl you put in the freezer the night before. If using a food processor, just pour the shaved ice into the cold bowl.

  • Drizzle half of sweetened condensed milk all over the shaved ice. Add the fruits, sweetened red bean paste, and mochi on top. Drizzle the rest of the sweetened condensed milk all over, and enjoy.
