Roasted Rainbow Carrots with European Style Yogurt

This roasted carrots recipe is versatile and easy to make. It is topped with a flavorful sauce made with our Organic Whole Milk European Style Yogurt. A drizzle of honey and a sprinkle of chopped cilantro take these vegetables to the next level.

  • Preheat oven to 400 F. Clean carrots and spread onto a large baking sheet. Sprinkle carrots with garlic powder, cumin, paprika, salt, and pepper. Drizzle olive oil over carrots and toss.

  • Place the carrots in the oven and bake for 15 minutes or until caramelized and cooked through. While the carrots are cooking, whisk together the Straus Family Creamery Organic European Style Yogurt,  minced garlic, and salt and pepper to taste.

  • Serve carrots on a platter, and drizzle yogurt sauce on top. Drizzle honey over the yogurt sauce, garnish with chopped cilantro, and enjoy!
