Kefir Vanilla Custard

Chef Kelly Scott turns our Organic Lowfat Plain Kefir into the dreamiest Kefir Vanilla Custard ever.

Ingredients

  • 2 cups Straus Organic Lowfat Plain Kefir
  • 1 vanilla bean, split and inside removed
  • 1/2 teaspoon salt
  • 5 egg yolks
  • 1/4 cup maple syrup
  • 1 tablespoon cornstarch
  • Optional toppings: fruit and nuts for garnish

Instructions

Add Straus Family Creamery Organic Lowfat Plain Kefir, vanilla bean, and salt to a pot and place over medium-low heat. Stir while slowly heating up. Make sure you keep this over medium-low heat so it doesn’t get too hot and curdle. Once it is steaming and warm, turn off the heat.

In a bowl, whisk together the egg yolks, maple syrup, and cornstarch until smooth. While whisking, slowly drizzle in the warm organic Kefir mixture until it is fully incorporated.

Return the mixture back to the pot and place over medium-low heat. Stir continuously until the mixture has thickened, around 2-5 minutes. Make sure you keep this over medium-low heat so it doesn’t get too hot and curdle. Once it is thick enough to coat the back of a spoon and not move, turn off the heat.

Strain the mixture into a fine mesh strainer above a bowl. Use a spatula to work the mixture through the fine mesh strainer to make it extra smooth.

Pour into 4-6 oz ramekins, then refrigerate for 3 hours minimum to set.

Remove and garnish with desired fruits and nuts, then serve and enjoy.
