Kefir Vanilla Custard

Ingredients

  •  Straus Organic Lowfat Plain Kefir
  •  vanilla bean, split and inside removed
  •  salt
  •  egg yolks
  •  maple syrup
  •  cornstarch
  •  fruit and nuts for garnish

Instructions

  • Add Straus Family Creamery Organic Lowfat Plain Kefir, vanilla bean, and salt to a pot and place over medium-low heat. Stir while slowly heating up. Make sure you keep this over medium-low heat so it doesn’t get too hot and curdle. Once it is steaming and warm, turn off the heat.

  • In a bowl, whisk together the egg yolks, maple syrup, and cornstarch until smooth. While whisking, slowly drizzle in the warm organic Kefir mixture until it is fully incorporated.

  • Return the mixture back to the pot and place over medium-low heat. Stir continuously until the mixture has thickened, around 2-5 minutes. Make sure you keep this over medium-low heat so it doesn’t get too hot and curdle. Once it is thick enough to coat the back of a spoon and not move, turn off the heat.

  • Strain the mixture into a fine mesh strainer above a bowl. Use a spatula to work the mixture through the fine mesh strainer to make it extra smooth.

  • Pour into 4-6 oz ramekins, then refrigerate for 3 hours minimum to set.

  • Remove and garnish with desired fruits and nuts, then serve and enjoy.
